 When I came to the Netherlands I was shocked by the quality of food in most Italian restaurants except the very exclusive ones. And this is a general problem of the Italian restaurants abroad.
The mediocre quality of ingredients, the stereotypic decor of most restaurants and the lackadaisical service are something I consider unforgivable to present as Italian.
We are world famous for our hospitality and what I have experienced in many so-called Italian restaurants is truly misrepresentative of reality as I know it. Then there must be also a good reason why Italian food is considered world wide one of the richest and most delicious! I would like to suggest to you that there is a huge spectrum of gustatory delight which is not just lasagne, spaghetti, “maccaroni” and pizza!
You see, just cooking to eat is not the Italian way. A great part of the enjoyment of our cuisine is what we in Italy call  “convivio or convivialità”. That is the idea that good food is a vehicle for bringing people together in a warm, cozy atmosphere of total acceptance which enhances lively conversation and sharing.
At home a meal can take hours, something you could never expect in a restaurant where “turn over” is important. When I come into your home and cook for you, there is no rush, no cutting off the conversation, no worry about anything. The meal and the company are the only things that matter.
